How To Make Southwest Blackened Cajun Chicken with Rice
This blackened cajun chicken is pan-fried in one pan for a fuss-free dinner meal! Enjoy succulent bites of smoky chicken served over fluffy, flavored rice.

Ingredients
- 2tbspolive oil
- 6chicken thighs,or breasts, boneless skinless
- 1tbspcajun seasoning
- 2cupslong grain rice
- 3cupschicken broth
- 15ozblack beans,(1 can), drained
- 15oztomatoes with juice,(1 can), diced
- 1tspchili powder
- ¼tsppaprika
- ¼tspcumin
- fresh parsley,chopped, for garnish
- avocado,sliced, for serving, optional
Instructions

In a large skillet, add the olive oil. Rub the chicken in the Cajun seasoning.

Cook over medium high heat until cooked throughout. Remove and set aside on a plate covered in foil.

Add the rice, chicken broth, black beans, tomatoes, chili powder, paprika, and cumin. Bring to a boil, reduce heat and cover for 20 to 25 minutes until all of the liquid is absorbed.

Add the chicken back to the pan and cover until the chicken is heated through to 165 degrees F.

Garnish with fresh parsley and sliced avocado, serve, and enjoy!
