How To Make One Pot Parmesan Chicken with Mushroom Rice
Save time and energy with this one pot parmesan chicken with mushroom rice! Cubed chicken, rice, and heavy cream are tossed in the pot for a 25-minute dish.

Ingredients
- 1lbchicken breast,cubed
- 1tbspolive oil
- 1tbsp*Italian seasoning,(see Recipe Notes for recipe)
- 1cuplong grain rice,uncooked
- 2½cupschicken broth
- 6ozmushrooms,(about 1 cup) sliced
- ½cupheavy whipping cream
- ¼cupparmesan cheese,shredded, plus more for garnish
- salt and pepper,to taste
- parsley,chopped, for garnish
Instructions

In a medium-sized pot or skillet add the olive oil and turn to medium-high heat.

Add the chicken to the skillet along with Italian Seasoning and salt and pepper and cook until the chicken is no longer pink and cooked throughout.

Add the uncooked rice to the skillet, chicken broth, and mushrooms. Reduce heat to medium-low and cover and let simmer for 15 to 20 minutes until rice is cooked and tender.

Stir in heavy cream and parmesan cheese and salt and pepper to taste.

Garnish with freshly grated parmesan and fresh chopped parsley.
