Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 red bell pepper, seeded and cut into 1-inch pieces
- 1 green bell pepper, seeded and cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- Wooden or metal skewers

In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, dried thyme, dried rosemary, salt, and black pepper. Mix well.

Add chicken cubes to the marinade and toss to coat. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results.

If using wooden skewers, soak them in water for 30 minutes to prevent burning.

Preheat grill to medium-high heat.

Thread marinated chicken, bell peppers, and onion onto skewers, alternating the ingredients.

Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
