- 1.5 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 cup pineapple chunks
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 tablespoons ketchup
- 1 tablespoon vegetable oil
- 1 teaspoon garlic powder
- 1/2 teaspoon ground ginger
- Salt and pepper to taste

In a large bowl, whisk together soy sauce, brown sugar, ketchup, vegetable oil, garlic powder, ginger, salt, and pepper.

Add chicken cubes to the marinade, coating well. Allow the chicken to marinate for at least 15 minutes, or up to 4 hours in the refrigerator.

Preheat grill to medium-high heat. Thread marinated chicken, pineapple chunks, and bell peppers onto skewers, alternating ingredients.

Grill kabobs for 6-8 minutes per side, or until chicken is fully cooked and pineapple is caramelized, basting with any remaining marinade.
