Ingredients
- 2 cups dried pinto beans
- 1 onion, chopped
- 4 cloves garlic, minced
- 1 jalapeno pepper, seeded and minced
- 1 tsp cumin
- 1 tsp chili powder
- 4 cups vegetable broth
- 1 tsp salt
- 2 tbsp olive oil
Instructions

Rinse the pinto beans under cold water and remove any debris or stones.

Set the Instant Pot® to sauté mode and heat the olive oil. Add the onion, garlic, and jalapeno pepper and cook until softened, about 5 minutes.

Stir in the cumin and chili powder and cook for an additional minute.

Add the pinto beans, vegetable broth, and salt to the Instant Pot®. Lock the lid in place and set the valve to sealing.

Cook on high pressure for 60 minutes. Once the cooking time is complete, allow the pressure to release naturally for 15 minutes, then manually release any remaining pressure.

Use a potato masher or immersion blender to mash the beans to your desired consistency. If the beans are too thick, you can add some additional vegetable broth or water.

Serve the refried beans as a side dish or use as a filling for tacos and burritos. Enjoy!
