Ingredients
- 8 chicken drumsticks
- 1 cup low-sodium soy sauce
- 1/2 cup brown sugar
- 1/4 cup rice vinegar
- 1/4 cup water
- 4 cloves garlic, minced
- 1 inch ginger, grated
- 1 tablespoon cornstarch
- 2 tablespoons water
- 2 green onions, thinly sliced
Instructions

In the Instant Pot, combine soy sauce, brown sugar, rice vinegar, water, garlic, and ginger.

Add the chicken drumsticks to the Instant Pot and coat them with the marinade.

Close the lid and set the Instant Pot to high pressure for 10 minutes.

Once the cooking time is up, allow the pressure to release naturally for 5 minutes, then do a quick release.

Remove the chicken drumsticks from the Instant Pot and set aside.

In a small bowl, whisk together cornstarch and water until smooth.

Turn on the sauté function on the Instant Pot and add the cornstarch mixture to the remaining marinade.

Cook the marinade mixture until it thickens, stirring constantly.

Return the chicken drumsticks to the Instant Pot and coat them with the thickened sauce.

Garnish with green onions and serve hot.
