Ingredients
- 1.5 lbs boneless skinless chicken breasts
- 1 cup salsa
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
- Optional toppings: shredded cheese, diced tomatoes, chopped cilantro
Instructions
-
Season the chicken breasts with cumin, chili powder, garlic powder, onion powder, paprika, salt, and black pepper.
-
Set the Instant Pot to “Sauté” mode and heat the olive oil. Add the seasoned chicken breasts and sear for 2-3 minutes on each side until browned.
-
Pour in the salsa and stir well to coat the chicken.
-
Close the lid of the Instant Pot and set the valve to “Sealing” position. Cook on “Manual” or “Pressure Cook” mode for 10 minutes.
-
Once the cooking time is up, allow the Instant Pot to naturally release pressure for 5 minutes, then manually release any remaining pressure.
-
Use two forks to shred the chicken directly in the Instant Pot. Stir to mix the shredded chicken with the salsa sauce.
-
Serve the Instant Pot Salsa Chicken hot with your choice of toppings.
