Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into cubes
- 1 cup diced green chilies
- 1 cup long-grain white rice
- 1 cup chicken broth
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
Instructions

Place the Instant Pot on sauté mode and heat some oil. Add the chicken cubes and cook until browned.

Add the diced green chilies, rice, chicken broth, garlic powder, cumin, chili powder, salt, and black pepper to the Instant Pot. Stir well.

Close the Instant Pot lid and set the valve to sealing. Cook on manual high pressure for 8 minutes.

Once the cooking time is up, let the pressure release naturally for 5 minutes, then do a quick release.

Stir in the chopped cilantro and lime juice. Let it sit for a few minutes to allow the flavors to blend.
