How To Make Instant Pot Creamy Parmesan Chicken and Rice
Feel like a winner each time with this easy chicken and rice dish. It cooks easily in an instant pot with mushrooms for a fuss-free dinner meal!

Ingredients
- 1tbspolive oil
- 1small onion,diced
- 1½lbschicken,cut into 1-inch cubes
- 1tbspItalian seasoning
- salt and pepper
- 4cupschicken broth
- 1½cupsrice,rinsed, I used Jasmine
- 1cupmushrooms,sliced
- ½cupheavy whipping cream
- ¼cupparmesan cheese,shredded
- salt and pepper,to taste
For Garnish:
- parsley,chopped
- parmesan cheese,freshly shredded
Instructions

Set the instant pot to sauté. Add in olive oil and onion. Cook until it is almost tender and then add the chicken.

Add the Italian seasoning and salt and pepper. Continue to sauté until no longer pink.

Add in the chicken broth, rice, and mushrooms. Cover the instant pot and make sure it is in the sealed position.

Cook on manual High for 8 minutes. Carefully quick release the remaining pressure.

Stir in the heavy cream and Parmesan Cheese. Serve with freshly shredded cheese and chopped parsley for garnish.
