Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 lb smoked sausage, sliced
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 3 cups chicken broth
- 2 tbsp flour
- 2 tbsp oil
- 1 tbsp Cajun seasoning
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Cooked rice, for serving
- Chopped green onions, for garnish
Instructions

Set the Instant Pot to “Saute” mode. Heat the oil and add the chicken and sausage. Cook until browned, then remove from the pot and set aside.

Add the onion, bell pepper, celery, and garlic to the pot. Cook until softened, about 5 minutes.

Stir in the flour and cook for 1 minute. Add the diced tomatoes, chicken broth, Cajun seasoning, thyme, oregano, paprika, cayenne pepper, salt, and pepper. Mix well.

Return the chicken and sausage to the pot. Close the lid and set the Instant Pot to “Pressure Cook” mode for 15 minutes.

Once the cooking time is complete, let the pressure release naturally for 10 minutes, then do a quick release.

Serve the gumbo over cooked rice and garnish with chopped green onions.
