Ingredients

  • 1.5 pounds beef stew meat, cubed
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 2 cups beef broth
  • 1 cup red wine
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional)
  • 2 tablespoons water (optional)

Instructions

  1. Set your Instant Pot to sauté mode and heat the olive oil.

  2. Add the beef stew meat and cook until browned on all sides.

  3. Add the diced onion and minced garlic, and sauté for 2-3 minutes until fragrant.

  4. Add the sliced carrots, celery, and diced potatoes to the Instant Pot.

  5. Pour in the beef broth, red wine, tomato paste, dried thyme, bay leaf, and season with salt and pepper.

  6. Close the lid of the Instant Pot and set it to manual high pressure for 35 minutes.

  7. Once the cooking time is done, allow the pressure to naturally release for 10 minutes, then carefully quick release the remaining pressure.

  8. If desired, you can thicken the stew by mixing cornstarch and water together and adding it to the Instant Pot. Set the Instant Pot to sauté mode and cook until the stew has thickened.

  9. Serve the Instant Pot Best Beef Stew hot, garnished with fresh herbs if desired.
