Serves:
Ingredients
- 1 lb pork shoulder, cut into bite-sized pieces
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 onion, diced
- 1 red bell pepper, diced
- 1 cup basmati rice
- 2 cups chicken broth
- 2 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tsp sesame oil
- 1 tsp sugar
- 1/4 cup chopped cilantro
- Sliced green onions, for garnish
Instructions
-
Heat a large pot or Dutch oven over medium heat. Add the pork shoulder and cook until browned, about 5 minutes.
-
Add the minced garlic, grated ginger, diced onion, and diced red bell pepper to the pot. Cook for an additional 2-3 minutes, until the vegetables are tender.
-
Stir in the basmati rice, chicken broth, soy sauce, fish sauce, sesame oil, and sugar. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
-
Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
-
Stir in the chopped cilantro and garnish with sliced green onions. Serve hot.
