Ingredients

  • 1 lb pork shoulder, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 1 cup basmati rice
  • 2 cups chicken broth
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/4 cup chopped cilantro
  • Sliced green onions, for garnish

Instructions

  1. Heat a large pot or Dutch oven over medium heat. Add the pork shoulder and cook until browned, about 5 minutes.

  2. Add the minced garlic, grated ginger, diced onion, and diced red bell pepper to the pot. Cook for an additional 2-3 minutes, until the vegetables are tender.

  3. Stir in the basmati rice, chicken broth, soy sauce, fish sauce, sesame oil, and sugar. Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 20-25 minutes, or until the rice is cooked and the liquid is absorbed.

  4. Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.

  5. Stir in the chopped cilantro and garnish with sliced green onions. Serve hot.
