- 4 boneless, skinless chicken breasts
- 1 cup cooked rice

- Salt and pepper to taste
- 2 tablespoons olive oil

Preheat the oven to 375°F (190°C).

Butterfly each chicken breast by cutting horizontally through the middle, without cutting all the way through. Open the chicken breasts like a book.

Season the chicken breasts with salt, pepper, garlic powder, and paprika.

In a bowl, combine the cooked rice, diced bell peppers, diced onions, and shredded cheddar cheese.

Spoon the rice mixture onto each chicken breast, then roll them up tightly.
