How To Make Cajun Rice with Chorizo Meatballs & Fried Eggs

Ingredients

  • 1 cup long grain white rice
  • 2 cups chicken broth
  • 1 tbsp Cajun seasoning
  • 1 lb chorizo sausage, casings removed
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped onion
  • 1/4 cup chopped bell pepper
  • 2 cloves garlic, minced
  • 1/4 cup chopped parsley
  • 4 eggs
  • Salt and pepper, to taste
  • Vegetable oil, for frying

Instructions

  1. In a medium saucepan, bring the chicken broth to a boil. Stir in the rice and Cajun seasoning. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.

  2. Preheat the oven to 375°F (190°C).

  3. In a bowl, mix together the chorizo sausage, breadcrumbs, onion, bell pepper, garlic, and parsley. Form into meatballs.

  4. Heat a large skillet over medium heat and add the meatballs. Cook for 8-10 minutes or until browned on all sides. Transfer to a baking sheet and bake for 15-20 minutes or until cooked through.

  5. Meanwhile, heat vegetable oil in a separate skillet over medium heat. Fry the eggs to your desired doneness.

  6. Serve the Cajun rice topped with chorizo meatballs and a fried egg. Season with salt and pepper to taste.
