Ingredients
- 1.5 lbs beef, cut into cubes
- 1 onion, chopped
- 3 cloves of garlic, minced
- 1-inch ginger, grated
- 2 tbsp curry powder
- 1 tsp turmeric powder
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 cup coconut milk
- 1 cup beef broth
- 2 potatoes, peeled and cubed
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

Heat the pressure cooker on sauté mode and add the beef cubes. Sear them until browned on all sides.

Add the chopped onion, minced garlic, and grated ginger. Sauté for a few minutes until the onions become translucent.

In a small bowl, mix together the curry powder, turmeric powder, cumin powder, and coriander powder. Add this spice mixture to the pressure cooker and stir well to coat the beef and onions.

Pour in the coconut milk and beef broth. Stir to combine everything.

Add the cubed potatoes and season with salt.

Close the pressure cooker lid and set the valve to sealing position.

Cook on high pressure for 30 minutes.

Once the cooking time is complete, let the pressure release naturally for 10 minutes before manually releasing any remaining pressure.

Open the lid and give the curry a stir. If needed, simmer for a few more minutes to thicken the sauce.
