Ingredients
- 1 cup dried chickpeas, soaked overnight and drained
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp chili powder (adjust to taste)
- 1 can (14 oz) coconut milk
- 1 cup vegetable broth
- Salt, to taste
- Fresh cilantro, for garnish
Instructions

In a large pot, heat some oil and sauté the onions, garlic, and ginger until fragrant.

Add the cumin, coriander, turmeric, and chili powder and cook for another minute.

Add the soaked chickpeas, coconut milk, and vegetable broth to the pot. Bring to a boil and then reduce to a simmer.

Cover and cook for about 30-40 minutes, or until the chickpeas are tender.

Season with salt to taste.

Serve hot with rice or naan bread, garnished with fresh cilantro.
