Ingredients
- 1 sheet of puff pastry
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 cup of cherry tomatoes
- 1 cup of spinach
- 1/4 cup of fresh basil, chopped
- Salt and pepper to taste
- Olive oil for drizzling
Instructions

Preheat the oven to 375°F (190°C).

Roll out the puff pastry sheet and place it in a pie dish, trimming any excess.

In a large bowl, toss the sliced peppers, zucchini, red onion, cherry tomatoes, and spinach with olive oil, salt, and pepper.

Arrange the veggies in a rainbow pattern on top of the pastry.

Sprinkle the chopped basil over the veggies.
