How To Make Sweet Potato & Spinach Bake

Ingredients
- 2 large sweet potatoes, peeled and thinly sliced
- 2 cups fresh spinach leaves
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 cup grated cheddar cheese
- 1/2 cup milk
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until the onion is translucent.

Add the spinach to the skillet and cook until wilted.

In a greased baking dish, layer the sweet potato slices, spinach mixture, and grated cheese. Repeat the layers until all the ingredients are used.

In a small bowl, whisk together the milk, dried thyme, salt, and pepper. Pour the mixture over the sweet potatoes and spinach.

Cover the baking dish with foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes or until the sweet potatoes are tender and the top is golden brown.

Remove from the oven and let it cool for a few minutes before serving.
