How To Make Super-easy Sausage Casserole

Ingredients
- 1 lb sausages
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, sliced
- 1 red bell pepper, diced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions

Preheat the oven to 375°F (190°C).

In a large oven-safe skillet, heat olive oil over medium heat. Add sausages and cook until browned on all sides. Remove sausages and set aside.

In the same skillet, add onion and garlic. Cook until translucent and fragrant.

Add carrots and red bell pepper. Cook for 5 minutes, until slightly softened.

Return sausages to the skillet. Stir in diced tomatoes, chicken broth, tomato paste, thyme, oregano, salt, and pepper.

Bring the mixture to a simmer. Cover and transfer to the preheated oven.

Bake for 25-30 minutes, until the sausages are cooked through and the flavors have melded.
