Ingredients

  • 4 slices of bacon, chopped
  • 1 onion, diced
  • 1 red bell pepper, diced
  • 2 cloves of garlic, minced
  • 1 tsp smoked paprika
  • 1 can of baked beans
  • 4 slices of bread, crusts removed
  • 4 eggs
  • Salt and pepper to taste
  • Chopped parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large skillet, cook the bacon over medium heat until crispy. Remove from the skillet and set aside.

  3. In the same skillet, sauté the onion, red bell pepper, and garlic until softened.

  4. Add the smoked paprika and stir to coat the vegetables.

  5. Pour in the baked beans and cooked bacon. Stir to combine and simmer for 5 minutes.

  6. In a greased baking dish, arrange the slices of bread in a single layer.

  7. Make a well in the center of each slice of bread and crack an egg into each well. Season with salt and pepper.

  8. Pour the smoky bean and bacon mixture around the bread and eggs in the baking dish.

  9. Transfer the dish to the preheated oven and bake for 20-25 minutes, or until the eggs are cooked to your liking.

  10. Remove from the oven and garnish with chopped parsley.

  11. Serve the smoky bean, bacon & eggy bread bake hot.
