How To Make Sausage Cassoulet

Ingredients
- 4 sausages, sliced
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 carrots, diced
- 2 stalks of celery, diced
- 1 can of cannellini beans, rinsed and drained
- 1 can of diced tomatoes
- 1 cup of chicken broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, cook the sausages over medium heat until browned. Remove from the pot and set aside.

In the same pot, add the onion and garlic. Cook until softened and fragrant.

Add the carrots and celery and cook for another 5 minutes.

Return the sausages to the pot and add the cannellini beans, diced tomatoes, chicken broth, dried thyme, and dried rosemary. Season with salt and pepper.

Bring the mixture to a simmer and let it cook for 1 hour, stirring occasionally.

Serve the cassoulet in bowls, garnished with fresh parsley.
