Ingredients
- 4 eggs, separated
- 1 cup grated cheese (Gruyere or Cheddar)
- 1/2 cup milk
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon dried thyme
- Pinch of cayenne pepper
Instructions

Preheat the oven to 375°F (190°C). Grease four ramekins with butter and dust with grated cheese.

In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes until it forms a smooth paste.

Slowly whisk in the milk and cook until the mixture thickens. Remove from heat and let it cool for a few minutes.

In a large mixing bowl, whisk the egg yolks and then gradually add the cooled milk mixture, whisking continuously.

Stir in the grated cheese, salt, black pepper, paprika, dried thyme, and cayenne pepper.

In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the egg whites into the cheese mixture.

Divide the mixture equally among the prepared ramekins. Place the ramekins on a baking sheet and bake for 20-25 minutes until puffed and golden.

Serve the soufflés immediately while still hot and puffy.
