How To Make Italian Vegetable Bake

Ingredients

  • 2 zucchinis, thinly sliced
  • 1 eggplant, thinly sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 can diced tomatoes
  • 1 tbsp Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a large baking dish, arrange the sliced zucchinis, eggplant, red and yellow bell peppers, onion, and minced garlic.

  3. Pour the diced tomatoes over the vegetables and sprinkle with Italian seasoning, salt, and pepper.

  4. Drizzle the olive oil over the vegetables and toss everything together to coat.

  5. Cover the baking dish with foil and bake for 25 minutes.

  6. Remove the foil, sprinkle the grated Parmesan cheese over the vegetables, and bake for an additional 15 minutes or until the cheese is melted and golden brown.

  7. Serve hot and enjoy!
