Ingredients
- 1 cup butter beans, cooked and drained
- 4 slices bacon, cooked and crumbled
- 1 onion, diced
- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 tablespoons all-purpose flour
- 1 cup vegetable broth
- 1 cup milk
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 sheets puff pastry, thawed
Instructions

Preheat the oven to 400°F (200°C).

In a large pan, cook the bacon until crispy. Remove from pan and crumble. Set aside.

In the same pan, sauté the onion and garlic until translucent. Add the mushrooms and cook until they release their moisture.

Stir in the flour and cook for a minute. Gradually whisk in the vegetable broth and milk. Cook until the mixture thickens.

Add the butter beans, crumbled bacon, dried thyme, salt, and pepper. Stir to combine.

Divide the mixture among 4 individual ovenproof dishes.

Roll out the puff pastry and cut into 4 circles, slightly larger than the dishes. Place the pastry over each dish, pressing the edges to seal.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and puffed.
