How To Make Beef & Swede Casserole

Ingredients
- 1.5 pounds beef stew meat, cubed
- 1 large swede, peeled and diced
- 2 carrots, peeled and sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 2 cups beef broth
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions

Preheat the oven to 325°F (163°C).

In a large oven-safe pot, heat the olive oil over medium-high heat. Add the beef cubes and brown them on all sides. Remove from the pot and set aside.

In the same pot, add the onion and garlic. Cook until the onion is translucent and the garlic is fragrant.

Sprinkle the flour over the onion and garlic, stirring well to coat. Cook for another minute.

Slowly pour in the beef broth, stirring continuously to prevent lumps.

Return the beef to the pot, along with the swede, carrots, thyme, bay leaf, salt, and pepper. Stir to combine.

Cover the pot and transfer it to the preheated oven. Cook for 2 hours, or until the beef is tender and the flavors have melded together.

Remove the bay leaf before serving.
