Ingredients
- 4 beef slices (approximately 1/4 inch thick)
- 4 slices of bacon
- 2 onions, finely chopped
- 4 dill pickles, sliced lengthwise
- 4 tablespoons Dijon mustard
- Salt and pepper to taste
- 1 tablespoon vegetable oil
- 2 cups beef broth
- 1 cup red wine
- 1 tablespoon cornstarch (optional, for thickening)
Instructions

Lay the beef slices flat and season with salt and pepper.

Spread 1 tablespoon of mustard on each beef slice.

Place a slice of bacon, some chopped onions, and a dill pickle slice on top of each beef slice.

Roll up the beef slices tightly, securing them with toothpicks if necessary.

Heat the vegetable oil in a large skillet over medium-high heat.

Add the beef rouladen and brown on all sides.

Remove the beef rouladen from the skillet and set aside.

In the same skillet, add the beef broth and red wine, scraping up any browned bits from the bottom of the skillet.

Return the beef rouladen to the skillet and bring the liquid to a boil.

Reduce the heat, cover, and simmer for about 1.5 to 2 hours, or until the beef is tender.

Remove the beef rouladen from the skillet and set aside.

If desired, mix the cornstarch with a little water to form a slurry, then whisk it into the cooking liquid to thicken the gravy.

Serve the beef rouladen with the gravy on top, alongside your favorite side dishes.
