Scrumptious, filling, and easy to make, this diabetic-friendly grilled salmon recipe serves a flavor-packed plate in just a few minutes. Its made with a zesty and flaky salmon fillet perfectly cooked with roasted asparagus.
Ingredients
- 4 oz salmon fillets, (up to 5 oz)
- ¼ cup basil leaves, chopped
- ¼ cup lemon juice
- 2 tbsp olive oil
- 2 cloves garlic, chopped
- 2 tsp lemon pepper
- cooking spray
For Serving:
- ¼ cup spinach, sauteed
- 1 oz lime, sliced
Instructions

Heat a sauté pan with garlic and olive oil for about 2 minutes until the garlic becomes fragrant.

Add basil. Saute for no more than 15 seconds, then remove from the heat and add lemon juice. Stir to combine and set aside.

Preheat a griddle pan and grease with cooking spray.

Brush the salmon fillets with lemon garlic mixture, then season the salmon with lemon pepper.

Grill the salmon for roughly 10 minutes until fully cooked.

Serve your salmon with any choice of vegetables.
