Serves:
Ingredients
- 1 lb pork tenderloin, sliced
- 1/2 cup barbecue sauce
- 2 tbsp soy sauce
- 2 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp vegetable oil
- 4 baby bok choy, halved
- Salt and pepper to taste
Instructions
-
In a bowl, combine barbecue sauce, soy sauce, honey, and minced garlic. Reserve 1/4 cup of the marinade for later.
-
Place the pork slices in a Ziploc bag and pour the remaining marinade over it. Let it marinate in the fridge for at least 30 minutes.
-
Heat vegetable oil in a large pan over medium-high heat. Remove pork from the bag and discard the marinade.
-
Cook the pork in the pan for about 3-4 minutes per side, or until cooked through.
-
In a separate pan, heat a little vegetable oil. Add the bok choy halves and season with salt and pepper. Sauté for about 3-4 minutes, or until tender-crisp.
-
Brush the reserved marinade on the cooked pork. Serve the barbecue pork with the sautéed bok choy on the side.
