Ingredients
- 1 can of black beans, drained and rinsed
- 1 cup of cooked quinoa
- 1/2 cup of diced red bell pepper
- 1/2 cup of diced zucchini
- 1/4 cup of diced red onion
- 2 cloves of garlic, minced
- 1 tsp of cumin
- 1 tsp of paprika
- 1/2 tsp of chili powder
- Salt and pepper to taste
- 1/4 cup of breadcrumbs
- 1/4 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh cilantro
- 1 cup of salsa
Instructions

Preheat the oven to 375°F (190°C) and grease a baking dish.

In a large bowl, mash the black beans with a fork until most of them are mashed.

Add the cooked quinoa, diced red bell pepper, diced zucchini, diced red onion, minced garlic, cumin, paprika, chili powder, salt, and pepper to the bowl. Mix well to combine.

In a separate small bowl, combine the breadcrumbs, grated Parmesan cheese, and chopped fresh cilantro.

Take a scoop of the bean mixture and form it into a patty. Roll the patty in the breadcrumb mixture to coat it evenly, then place it on the greased baking dish. Repeat with the remaining bean mixture.

Bake the Veggie Bean Bakes in the preheated oven for 20 minutes, or until they are crispy and golden brown.
