Ingredients
- 4 salmon fillets
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 4 potatoes, peeled and diced
- 1/2 cup milk
- 2 tbsp butter
- 3 tbsp chopped fresh coriander (cilantro)
- Salt and pepper to taste
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, mix together the paprika, cumin, coriander, salt, and black pepper.

Rub the spice mixture all over the salmon fillets.

Heat the olive oil in a skillet over medium-high heat. Add the salmon fillets, skin side down, and cook for 2-3 minutes until crisp. Flip the fillets and transfer the skillet to the preheated oven. Bake for 10-12 minutes or until the salmon is cooked through.

Meanwhile, place the diced potatoes in a large saucepan and cover with water. Bring to a boil and cook for 10-15 minutes until the potatoes are tender. Drain the potatoes and return them to the saucepan.

Add the milk, butter, chopped coriander, salt, and pepper to the potatoes. Mash until smooth and creamy.

Serve the spiced salmon fillets on top of the coriander mash.
