Ingredients
- 4 salmon fillets
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 4 egg yolks
- 1 tbsp lemon juice
- 1/2 cup unsalted butter, melted
- 1 tbsp fresh tarragon, chopped
- Lemon wedges, for serving
Instructions

Preheat the oven to 400°F (200°C). Season the salmon fillets with salt and black pepper.

Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the salmon fillets and cook for 2-3 minutes on each side to sear.

Transfer the skillet to the preheated oven and bake for 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.

Meanwhile, prepare the hollandaise sauce. In a heatproof bowl, whisk together the egg yolks and lemon juice.

Place the bowl over a pan of simmering water, making sure the bottom of the bowl does not touch the water. Whisk constantly until the mixture thickens.

Remove the bowl from the heat and slowly whisk in the melted butter, a little at a time, until the sauce is smooth and creamy.

Stir in the chopped tarragon and season with salt and pepper to taste.

Serve the salmon fillets topped with the tarragon hollandaise sauce. Garnish with lemon wedges. Enjoy!
