How To Make Roast Aubergines with Almond Tarator, Feta, Dill & Green Chilli

Ingredients

  • 2 large aubergines
  • 1/4 cup almond butter
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons chopped fresh dill
  • 1 green chilli, thinly sliced

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Slice the aubergines into 1/2-inch thick rounds.

  3. In a small bowl, whisk together the almond butter, lemon juice, olive oil, minced garlic, salt, and black pepper.

  4. Place the aubergine slices on a baking sheet and brush both sides with the almond butter mixture.

  5. Roast in the preheated oven for 20-25 minutes, or until the aubergines are tender and slightly browned.

  6. Remove from the oven and let cool for a few minutes.

  7. Transfer the roasted aubergine slices to a serving platter.

  8. Sprinkle the crumbled feta cheese, chopped dill, and sliced green chilli over the top.

  9. Serve warm or at room temperature.
