Preparation: 20 minutes
Cooking: 40 minutes
Total: 60 minutes

Serves:

Ingredients

  • 1.5 lbs of pork tenderloin
  • 1 tbsp of olive oil
  • 8 slices of prosciutto
  • 1 package of puff pastry
  • 1/2 cup of Dijon mustard
  • 1/2 cup of breadcrumbs
  • 1 egg (beaten)
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the pork tenderloin with salt and pepper.

  3. Heat olive oil in a pan over medium-high heat. Sear the pork tenderloin on all sides until browned.

  4. Remove the pork from the pan and let it cool.

  5. Lay out the prosciutto slices on a sheet of plastic wrap, slightly overlapping them.

  6. Spread a thin layer of Dijon mustard over the prosciutto.

  7. Sprinkle breadcrumbs evenly over the mustard.

  8. Place the seared pork tenderloin on top of the breadcrumbs.

  9. Use the plastic wrap to tightly roll the prosciutto and breadcrumbs around the pork, forming a tight log.

  10. Place the puff pastry sheet on a baking sheet lined with parchment paper.

  11. Unwrap the pork from the plastic wrap and place it in the center of the puff pastry sheet.

  12. Brush the edges of the puff pastry with the beaten egg.

  13. Fold the puff pastry over the pork, sealing it tightly.

  14. Brush the entire surface of the puff pastry with the beaten egg.

  15. Bake in the preheated oven for about 30-35 minutes, or until the pastry is golden brown and the pork reaches an internal temperature of 145°F (63°C).

  16. Allow the Pork Wellington to rest for a few minutes before slicing.

  17. Serve and enjoy!
