How To Make Mountain Chicken (Ruby Tuesday Copycat)

Tender and tasty, this Ruby Tuesday-inspired mountain chicken tops herbed chicken breasts with barbecue sauce, ham, and cheese, for a heavenly, baked bite.

Preparation: 5 minutes
Cooking: 25 minutes
Total: 30 minutes

Serves:

Ingredients

  • 4chicken breasts,skinless, boneless
  • ground black pepper,to taste
  • 1tspgarlic powder
  • 1tspItalian-style seasoning
  • 18ozbarbecue sauce,(1 bottle)
  • 4slicesham
  • 4slicesMonterey Jack cheese
  • cupgreen onion,chopped, for topping
  • ¼cuptomatoes,chopped, for garnish

Instructions

  1. Preheat oven to 350 degrees F.

  2. Place chicken breasts in a lightly greased 9×13-inch baking dish. Season with pepper, garlic powder, and Italian seasoning to taste.

  3. Bake seasoned chicken in the preheated oven for 20 to 30 minutes or until cooked through and juices run clear.

  4. When chicken is done, remove from oven and pour on barbecue sauce. Layer each breast with 1 slice of ham, then 1 slice of cheese.

  5. Return to oven and continue to bake for 5 minutes or until cheese has melted. Remove from oven and top with chopped green onions and tomatoes.

  6. Serve and enjoy.
