Ingredients
- 4 salmon fillets
- 4 large leeks, trimmed and cleaned
- 2 tablespoons olive oil
- Salt and pepper to taste
- 4 sprigs fresh dill
- 1 lemon, sliced
Instructions

Preheat the oven to 400°F (200°C).

Cut 4 large rectangles of parchment paper, big enough to wrap around each salmon fillet.

Slice the leeks lengthwise and blanch them in boiling water for 3 minutes. Drain and pat dry.

Brush each piece of parchment paper with olive oil.

Place a salmon fillet on each piece of parchment paper and season with salt and pepper.

Top each fillet with a blanched leek, a sprig of fresh dill, and a few slices of lemon.

Fold the parchment paper over the salmon and fold the edges to seal the parcel.

Place the parcels on a baking sheet and bake for 25 minutes, or until the salmon is cooked through.

Carefully open the parcels and serve the leeky salmon hot.
