  • 4 eggs, separated
  • 1 cup grated cheddar cheese
  • 1/2 cup milk
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika

Instructions

  1. Preheat the oven to 375°F (190°C). Grease 4 ramekins with butter or cooking spray.

  2. In a large mixing bowl, beat the egg yolks until pale and creamy. Gradually add the grated cheddar cheese, milk, flour, salt, black pepper, and paprika, and mix until well combined.

  3. In a separate bowl, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the cheese mixture until just combined.

  4. Divide the mixture evenly among the prepared ramekins. Place the ramekins on a baking sheet and bake for 20-25 minutes, or until the soufflés are puffed and golden.

  5. Remove the soufflés from the oven and allow them to cool slightly. Using a sharp knife, carefully loosen the edges of the soufflés from the ramekins. Gently remove the soufflés from the ramekins and place them upside down on a baking sheet.

  6. Return the soufflés to the oven and bake for an additional 10 minutes, or until they are golden brown and crisp on the outside.

  7. Serve the double-baked cheddar soufflés immediately as an appetizer or a side dish.
