How To Make Corn and Beef Pie
This Corn and Beef Pie is a flavorful deep-dish meal with crumbly ground beef seasoned in garlic and chili powder. Top it off with cornmeal, tomato sauce, and shredded cheese to make a savory yet cheesy meal with just a microwave!
Ingredients
- ¾ lb ground beef
- 2 tbsp onion, chopped
- ⅛ tsp garlic powder
- 8 oz tomatoes, drained but reserve ½ cup liquid
- 8 oz corn, drained
- ½ tsp chili powder
- 1 egg
- ½ cup cornmeal
- ½ cup cheese, shredded
- salt, to taste
Instructions

Crumble the ground beef into a microwave-safe baking dish. Add onion and garlic.

Loosely cover the baking dish and microwave on high for 2 minutes.

Break up the beef and stir. Cover and microwave on high for 2 to 3 minutes until the beef does not appear pink. Drain excessive fat.

Stir in corn, tomatoes, olives, chili powder, and salt.

Microwave for 4 to 6 minutes until hot and bubbly.

Beat the egg in a bowl, stirring in the cornmeal, and reserve tomato liquid.

Pour the egg mixture over the meat and sprinkle cheese on top.

Microwave on high for 3 to 6 minutes until topping is no longer doughy.

Top it off with more cheese and savor a crumbly Corn and Beef Pie!
