How To Make Braised Lamb & Goat’s Cheese Pies with Gravy

Serves:

Ingredients

  • 500g lamb shoulder, diced
  • 200g goat’s cheese, crumbled
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 tbsp butter
  • 2 tbsp flour
  • 500ml beef or vegetable stock
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste
  • 500g puff pastry
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. In a large pan, heat the butter and sauté the onion, garlic, carrots, and celery until softened.

  3. Add the lamb and cook until browned on all sides.

  4. Stir in the flour and cook for a minute, then gradually add the stock and Worcestershire sauce.

  5. Season with salt and pepper and bring to a simmer. Cover and cook for 1.5 hours, or until the lamb is tender.

  6. Roll out the puff pastry and cut out 4 circles to fit your pie dishes.

  7. Divide the lamb mixture between the dishes and top with crumbled goat’s cheese.

  8. Brush the edges of the dishes with beaten egg and place the pastry circles on top, pressing down to seal.

  9. Cut a small slit in the center of each pie to allow steam to escape.

  10. Brush the pastry with beaten egg and bake in the preheated oven for 30-35 minutes, or until golden brown and crisp.

  11. Serve the pies hot with the rich gravy.
