Ingredients
- 3 cups cooked rice
- 2 cups diced cooked chicken
- 1 cup frozen peas and carrots
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- 2 eggs, beaten
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and cook until the onion is translucent.

Add the frozen peas and carrots to the skillet and cook for an additional 2-3 minutes.

Add the cooked rice and diced chicken to the skillet, and stir to combine all the ingredients.

In a small bowl, whisk together the soy sauce, sesame oil, and beaten eggs.

Pour the sauce mixture over the rice mixture in the skillet, and stir until everything is evenly coated.

Transfer the mixture to a baking dish and spread it out evenly.

Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and crispy.

Remove from the oven and let it cool for a few minutes before serving.
