Ingredients
- 4 boneless, skinless chicken breasts
- 8 cloves of garlic, minced
- 1/2 cup unsalted butter, softened
- 1/4 cup fresh parsley, chopped
- 1 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 eggs, beaten
- 1/2 cup all-purpose flour
- Salt and pepper to taste
- Vegetable oil for frying
Instructions

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

In a small bowl, mix together the minced garlic, softened butter, and chopped parsley until well combined.

Carefully make a pocket in each chicken breast by cutting a slit horizontally about 3/4 of the way through the breast.

Stuff each pocket with about 1 tablespoon of the garlic butter mixture and seal the opening with toothpicks.

In separate bowls, place the beaten eggs, flour, and breadcrumbs mixed with Parmesan cheese.

Dip each stuffed chicken breast first into the flour, then into the beaten eggs, and finally into the breadcrumb mixture, pressing to adhere.

Heat vegetable oil in a large skillet over medium heat and fry the chicken breasts until golden brown on each side, about 3-4 minutes per side.

Transfer the browned chicken breasts to the prepared baking sheet and bake in the preheated oven for 15-20 minutes or until the chicken is cooked through and the internal temperature reaches 165°F (75°C).
