Ingredients
- 1 lb lamb, cut into cubes
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 4 oz feta cheese, cubed
- 1 cup brown rice, cooked
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 2 tbsp fresh parsley, chopped
- 2 tbsp lemon juice
- 2 tbsp olive oil
Instructions

In a large bowl, combine the lamb cubes, paprika, cayenne pepper, cumin, garlic powder, onion powder, salt, and pepper. Toss until the lamb is well coated.

Thread the lamb cubes onto skewers, alternating with cubes of feta cheese.

Heat a grill or grill pan over medium-high heat. Place the skewers on the grill and cook for about 4-5 minutes per side, or until the lamb is cooked to your desired level of doneness.

While the skewers are cooking, prepare the Greek brown rice salad. In a large mixing bowl, combine the cooked brown rice, cherry tomatoes, cucumber, red onion, Kalamata olives, parsley, lemon juice, and olive oil. Toss until well combined.
