How To Make Saddle of Lamb

Ingredients
- 2 lbs saddle of lamb
- 2 cloves of garlic, minced
- 2 sprigs of rosemary
- 2 sprigs of thyme
- Salt and pepper to taste
- 2 tablespoons of olive oil
- 1 cup of chicken or beef broth
Instructions

Preheat the oven to 375°F (190°C).

Season the saddle of lamb generously with salt and pepper on all sides.

Heat the olive oil in a large skillet over medium-high heat. Add the lamb and sear on all sides until browned, about 3-4 minutes per side.

Remove the lamb from the skillet and transfer it to a roasting pan. Rub the minced garlic all over the lamb, then place the rosemary and thyme sprigs on top.

Pour the chicken or beef broth into the roasting pan.

Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for 1 hour to 1 hour 15 minutes, or until the internal temperature reaches 145°F (63°C) for medium-rare.

Remove the lamb from the oven and let it rest for at least 10 minutes before carving.

Slice the saddle of lamb into individual portions and serve with your favorite side dishes.
