How To Make Roast Red Wine Lamb with Italian Beans

Ingredients
- 2 lbs lamb leg, bone-in
- 1 cup red wine
- 4 cloves garlic, minced
- 2 sprigs rosemary, chopped
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cans Italian-style beans, drained and rinsed
- 1 cup chicken broth
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
Instructions

In a large bowl, combine red wine, minced garlic, chopped rosemary, salt, and pepper. Place the lamb leg in the marinade and let sit for at least 1 hour or overnight in the refrigerator.

Preheat the oven to 325°F (163°C).

Heat olive oil in a large oven-safe skillet over medium-high heat. Remove the lamb from the marinade, reserving the marinade, and sear on all sides until browned, about 5 minutes. Remove the lamb from the skillet and set aside.

In the same skillet, add diced onion, carrots, and celery. Sauté until softened, about 5 minutes.

Add the drained beans, chicken broth, tomato paste, dried oregano, red pepper flakes, and the reserved marinade to the skillet. Stir well to combine.

Return the seared lamb leg to the skillet, nestling it into the bean mixture. Cover the skillet with foil and transfer it to the preheated oven.

Roast for about 2 hours or until the lamb is tender and cooked to your desired level of doneness.

Remove the skillet from the oven and let the lamb rest for 10 minutes before slicing.
