Ingredients
- 2 racks of lamb
- 2 tablespoons olive oil
- 2 cloves of garlic, minced
- 1 tablespoon fresh rosemary leaves, minced
- Salt and pepper to taste
Instructions

Preheat the oven to 450°F (230°C).

Season the lamb racks with salt and pepper.

Heat the olive oil in a large skillet over high heat. Sear the lamb racks, fat side down, until browned, about 3 minutes.

Remove the lamb racks from the skillet and place them on a baking sheet.

In a small bowl, mix together the minced garlic and rosemary. Rub the mixture over the surface of the lamb racks.

Roast the lamb in the preheated oven for about 15 minutes for medium-rare, or until desired doneness.

Remove the lamb from the oven and let it rest for 5 minutes before slicing.
