Ingredients
- 1 leg of lamb (about 4 pounds)
- 2 tablespoons of juniper berries
- 4 sprigs of fresh rosemary
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- Salt and pepper, to taste
Instructions

Preheat the oven to 350°F (175°C).

In a mortar and pestle, crush the juniper berries and rosemary together until fragrant.

In a small bowl, combine the crushed juniper berries and rosemary with the minced garlic, olive oil, salt, and pepper.

Rub the mixture all over the leg of lamb, ensuring it is evenly coated.

Place the leg of lamb on a roasting rack in a roasting pan.

Roast in the preheated oven for about 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.

Remove the lamb from the oven and let it rest for 10 minutes before carving.
