How To Make Roast Lamb with Spring Herb Crumbs

Ingredients

  • 4 lbs leg of lamb
  • 1 cup fresh breadcrumbs
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh rosemary, chopped
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 325°F (160°C).

  2. In a small bowl, combine the breadcrumbs, parsley, mint, rosemary, garlic, olive oil, salt, and pepper. Mix well.

  3. Place the leg of lamb on a rack in a roasting pan. Season with salt and pepper.

  4. Spread the herb crumb mixture evenly over the lamb, pressing gently to adhere.

  5. Roast the lamb in the preheated oven for about 1 hour and 30 minutes or until the internal temperature reaches 145°F (63°C) for medium-rare.

  6. Remove the lamb from the oven and let it rest for 10-15 minutes before carving.

  7. Serve the roast lamb with spring herb crumbs with your favorite side dishes.
