How To Make Railway Lamb Curry

Ingredients
- 500g lamb, cubed
- 2 onions, finely chopped
- 3 garlic cloves, minced
- 1-inch ginger, grated
- 2 tomatoes, pureed
- 2 tablespoons vegetable oil
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon turmeric powder
- 1 teaspoon chili powder (adjust to taste)
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, for garnish
Instructions

Heat oil in a large pot over medium heat. Add the onions and cook until golden brown.

Add the garlic and ginger, and cook for another minute.

Add the lamb cubes and cook until browned on all sides.

Reduce the heat to low and add the tomato puree. Cook for 5 minutes, stirring occasionally.

Add the ground cumin, coriander, turmeric, chili powder, and salt. Mix well to coat the lamb with the spices.

Cover the pot and let it simmer for 1 hour or until the lamb is tender, stirring occasionally.

Sprinkle garam masala over the curry and cook for another 5 minutes.

Garnish with fresh coriander leaves before serving.
