How To Make Quick Lamb & Potato Pot

Ingredients
- 1.5 lbs lamb stew meat, cut into cubes
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, peeled and diced
- 2 potatoes, peeled and diced
- 1 cup beef broth
- 1 tsp dried rosemary
- 1 tsp dried thyme
- Salt and pepper, to taste
- 2 tbsp olive oil
Instructions

Set the pressure cooker to the sauté function and heat the olive oil.

Add the lamb cubes and cook until browned on all sides.

Add the chopped onion and minced garlic, sauté for an additional 2 minutes.

Add the diced carrots, potatoes, beef broth, dried rosemary, and dried thyme.

Season with salt and pepper to taste.

Close the pressure cooker lid and set the cooking time to 35 minutes on high pressure.

Once the cooking time is complete, carefully release the pressure according to the manufacturer’s instructions.

Serve the lamb and potato pot hot, garnished with fresh herbs if desired.
