Ingredients
- 1 lb lamb leg or shoulder, cut into cubes
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 4 cloves of garlic, minced
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, combine the lamb, bell peppers, zucchini, red onion, garlic, olive oil, oregano, thyme, paprika, salt, and pepper. Mix well to coat the ingredients evenly.

Transfer the mixture to a baking sheet and spread it out in an even layer.

Roast in the preheated oven for 25-30 minutes, or until the lamb is cooked to your desired level of doneness and the vegetables are tender.

Remove from the oven and sprinkle with fresh parsley for garnish.
