How To Make Marinated Lamb Steaks with Barley Salad

Ingredients
- 4 lamb steaks
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- Salt and pepper, to taste
- 1 cup cooked barley
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup crumbled feta cheese
- 2 tablespoons chopped fresh parsley
- Juice of 1 lemon
Instructions

In a bowl, combine the olive oil, balsamic vinegar, minced garlic, dried rosemary, salt, and pepper. Mix well.

Place the lamb steaks in a shallow dish and pour the marinade over them. Let them marinate for at least 1 hour, or overnight for more flavor.

Preheat grill or stovetop grill pan over medium-high heat. Remove the lamb steaks from the marinade and grill for 3-4 minutes per side, or until desired doneness.

While the lamb is grilling, prepare the barley salad. In a large bowl, combine the cooked barley, cherry tomatoes, cucumber, red onion, feta cheese, parsley, and lemon juice. Toss well to combine.

Once the lamb steaks are cooked, remove them from the grill and let them rest for a few minutes. Slice the steaks into thin strips.

Serve the marinated lamb steaks over a bed of barley salad. Enjoy!
